  • Electrolysis is an established way to make hydrogen and oxygen on site, but end-use maturity differs sharply by sector.
  • India has credible policy support and visible pilots in steel, refining, fertilizer, ports, and electrolyzer manufacturing.

How electrolysis generates hydrogen and oxygen

Engineering logic matters more than the stack alone

  • Purified water enters the system; electricity drives the electrolyzer stack to split H2O into H2 and O2.
  • Usable gas quality requires water treatment, power electronics, gas-liquid separation, drying, purification, and pressure control.
  • Commercially, alkaline is the most mature route; PEM is more dynamic and compact, but often costlier.
  • Safety systems are not optional: venting, gas detection, shutdown logic, relief devices, and controlled piping are part of the package.

Adapting the same technology for restaurant cooking

Technically feasible when treated as an engineered fuel-gas system

  • A compact electrolyzer can generate hydrogen near real time from water and electricity, then feed purpose-designed burners.
  • The main distinction from bulk storage is lower on-site hydrogen inventory, not the absence of gas risk.
  • Likely best fit: hotels, institutional kitchens, premium restaurants, or campus kitchens with high utilization and innovation value.
  • Likely barriers: burner redesign, capex, staff training, and economics versus LPG.
